Welcome back to She Bills with Heart. I'm your host, Lilva Kapadia, chocolatier and entrepreneur and a chocolate business coach. Today, let's step away from business strategies for a moment and go back in time. Because to truly understand chocolate, we must understand where it came from. Chocolate is not just a product, it's a story, it's a journey, and it's an evolution that actually spans centuries in time. And if you are some someone building a chocolate business, knowing the story gives you depth, connection, and a whole new perspective. So today let's explore the evolution of chocolate. Chocolate began over 3000 years ago in ancient Mesoamerica. The Mayans and Aztecs didn't eat chocolate the way we do today, they consumed it as a drink. And even in parts of Latin America today, uh the white pulp and cacao is consumed in the form of fermented and fresh drinks. They made drinks from cacao beans, water, spices, and sometimes maize. So it was it was not something that was sweet, but it was bitter, spicy, frothy, and it was considered very sacred. It was considered the food of God, and only the kings and the supremes can only consume it, and it was not meant to be there for the locals and for common men. Even cacao beans were used as currency. So chocolate wasn't a treat, it was power, ritual, and it was related to status. When cacao reached Europe in the 16th century around, everything changed. Nobody exactly knows the time when chocolate was invented, but here in Europe, sugar was added, milk was introduced, the bitterness was softened, and and chocolate became chocolate, like something which is sweeter, smoother, and more luxurious. It was not the original chocolate which was consumed in the Mayan's and Aztec times, but this was an indulgence which treated our palate. And then the biggest shift came with industrialization. Machines were introduced that made chocolate smoother, consistent, and mass producible. Otherwise, it was only chocolate was only art and craft and made in batches, but only with industrialization it made it possible for the chocolate to grow in masses, and hence chocolate bars were invented, milk chocolate was developed, and all big uh commercial brands started to emerge. So chocolate moved now from an elite luxury, supreme premium commodity to everyday consumption, which was available for everyday man because then it was substituted with all alternative ingredients to make it more economical and cheaper, and because of mass production, this was possible and it reached every house, and everybody started consuming chocolate. So, to think of it in our memory, chocolate is something which is indulgence, creamy, and sweet, which authentically is not chocolate. Chocolate is authentically supposed to be bitter, dark, uh, something which you have a bite and you feel satisfied with doesn't have too much of sugar in it, and the cravings that we normally get are from the sugar, they are basically sugar cravings, they are not cacao cravings. I always say that you know, I eat a small bit of piece of dark chocolate every day, and a small piece satisfies my chocolate cravings, and it tries to soothe me and calms me down. So I don't need really a bar full bar of chocolate, you know, to get my cravings satisfied. Now, if we are to look at the modern chocolate world, so in today's world, with so many varieties and innovations and machines and easy availability of ingredients, chocolate has evolved into multiple forms. We have compound, coverture, filled chocolates, artisanal, gourmet gifting. It's no longer just a sweet, now it has become a business opportunity, a creative outlet, and uh chocolate has become a global industry and is growing every single year. And now, with more awareness, social media, and more conscious people coming, and customers are more um, you know, asking questions like where's the cacao source from? Is it ethical? What are the ingredients? Is it sustainable? And this has led to a revolution of bean to bar, and the global market of bean to bar and India is growing with every single year, and it is predicted, you know, by 2030, uh, this would be um there will be a drastic growth in this market of bean to bar, single origin, and clean label products. So now again, we are moving from mass production to mindful consumption, completing the cycles, right? So, in the form when chocolate was invented, it was only with clean ingredients made in small batches, food of powerful people, bitter, frothy, spicy, and then all commercialized, and now we are going back again into that small batch manufacturing dark chocolate clean label product. So, understanding this evolution gives you clarity. Uh, chocolate is not just about taste, it's about story now. Customers today value authenticity and transparency, and there is space for both mass and premium markets. So, if you are building a chocolate business, you're not just selling a product anymore, you are becoming part of this long evolving journey. So, from a bitter ceremonial drink to a global industry worth billions to now a conscious story-driven product.
